Paprika is a spice made from the air-dried fruits of the chili pepper family. Put paprika on cheeses, chicken, meat, potatoes, skewers, popcorn. In Greek cuisine, sweet paprika usually accompanies the souvlaki. It is mainly used for flavoring and coloring rice, stews and soups, such as goulash and in the preparation of sausages, where as an ingredient, it is mixed with meats and other spices.

**The ASTA number refers to the brightness of the paprika's red color and is a means of grading. 120-160 is bright red paprika that has a slightly smoky, very sweet smell with a bitter aftertaste and better quality than some with an ASTA number below 100.
